
Czech Potato Soup

Step 1

First, you need to cook a mushroom broth. To do this, clean the mushrooms, rinse them, and place them in a saucepan with cold water. Put the saucepan on the stove and bring the liquid to a boil. Then cook the mushrooms for fifteen minutes. Drain the water, add fresh water, and continue cooking the mushrooms for forty minutes.

Peel the potatoes and cut them into cubes. The smaller you cut them, the faster they will cook. Also peel the carrot, celery, and parsley root, then chop them into cubes.

Peel the onion and cut it into square pieces.

Take a deep frying pan, melt the lard in it. Over medium heat, sauté the vegetables in the fat. Add onion, carrot, celery, potato, and parsley root to the pan one after another. Fry them for about five minutes until partially cooked.

In a separate skillet, fry the flour in lard until it turns slightly brown. Then add a couple of tablespoons of mushroom broth to the flour and stir thoroughly to eliminate any lumps. Pour the resulting sauce into the vegetables. Reduce the heat to low, add the remaining broth, and simmer the soup for twenty minutes.

Rub the garlic with marjoram and add it to the soup. Also add red and black pepper, as well as salt, to taste. Mix everything well and cook the soup for another ten minutes until fully done.
