
Lentil soup with meat
Description
Hearty and aromatic soup. For lentil soup, it's best to use meat on the bone, such as turkey necks, which will work very well. All family members will surely appreciate this soup. Serve the soup hot.

Prepare the ingredients.

Put the turkey broth on to cook. Use two liters of water, accounting for evaporation. After boiling, skim off the foam, add root vegetables and onion to taste, and simmer over low heat until the meat is tender, about an hour. Add salt to the broth towards the end of cooking.

Remove the turkey necks and strain the broth. Return the broth pot to the stove. Remove the meat from the necks and cut it into small pieces.

Put the rinsed lentils into the broth and cook for 10 minutes.

Add the diced potatoes and cook until tender.

Meanwhile, sauté the chopped onion, carrot, bell pepper, and celery in oil. Do not brown them too much—just lightly golden the vegetables.

Add the sautéed vegetables to the soup and cook for another 2-3 minutes. Add the sliced meat to the pot and bring to a boil. Turn off the heat, season with pepper to taste, and let the soup steep, covered, for about 10 minutes.

Serve the soup hot, garnished with fresh herbs. Serve white croutons and garlic separately.
