
Quick soup without meat
Description
This simple recipe for a quick meatless soup is based on mushrooms, but if desired, you can replace them with potatoes—it will also turn out very tasty. As a base, you can use water or broth, either vegetable or meat. Ladle into bowls and serve.

1. First, peel and finely dice the onion.

2. Wash the mushrooms, dry them, and slice into small pieces. This quick meatless soup recipe uses button mushrooms, but you can substitute any other type of mushrooms.

3. Place the butter in a frying pan and melt it. In this case, it is not recommended to substitute it with vegetable oil.

4. Add the onion to the melted butter and sauté over medium heat until soft (do not cook until golden).

5. When the onion becomes transparent and soft, add a little flour and, stirring constantly, fry for another 2-3 minutes.

6. In a separate skillet, sauté the mushrooms for about 6-10 minutes.

7. Add mushrooms and onions to a saucepan with boiling water or broth. Simmer over medium heat for about 10 minutes.

8. Meanwhile, beat the egg yolks with the cream and a pinch of salt into a foam.

9. Using an immersion blender or a masher, mash the vegetables in the pot. If desired, the quick meatless soup can be left chunky instead of turning it into a puree.
