
Burchak shurpa
Description
The recipe won't take much time. Burchak shurpa is a delicious and hearty soup, especially popular in Tatar national cuisine. In the original recipe, shurpa is made with lamb, but I substituted it with beef. Be sure to try it. Serve with fresh herbs and sour cream.

Pour cold water over the meat and bring to a boil. Skim off the foam and cook until done. Add salt to taste.

Add the peeled and cubed potatoes to the broth. Cook for 10–12 minutes, then add the beans.

Finely chop the onion, then sauté it with tomato paste in a pan for 7-8 minutes. Add the sautéed mixture and noodles to the soup. Cook for another 20 minutes.

Add salt and pepper to taste. Remove the soup from the heat, and let it steep, covered, for 10 minutes.

Sprinkle the soup with herbs when serving.
