Hearty and aromatic soup. The recipe for celery broth is great because it offers many variations. A light and fragrant broth that can be used as a base for soup or enjoyed as a dish on its own. Let's prepare: 1. Cut celery into small rectangular pieces. 2. Peel the carrot and cut into similar-sized pieces. 3. Finely chop the onion or cut into quarters. 4. Grate the garlic on a grater or simply chop. 5. Pour a little olive oil into the bottom of a saucepan and heat well. 6. Add all the vegetables to the hot oil and season lightly with salt to taste. 7. Simmer the vegetables under a closed lid over the lowest heat for 20 minutes. 8. Once the vegetables are ready, add water, pepper, bay leaf, and herbs. 9. Bring to a boil, then simmer gently for about an hour. After cooking, strain the broth through a sieve or cheesecloth. The cooked vegetables can be used for vegetable purée soup. Homemade celery broth can be frozen in plastic containers and stored for about a month. If the broth is too concentrated, dilute it with clean water and bring to a boil. Pour into bowls and serve.
