
Broth with dumplings "Mimosa"

The recipe won't take much time. I found this dumpling recipe a long time ago in some magazine. I became interested and tried it. But—alas—it didn't turn out very well. The delicate yolk dumplings kept falling apart in the broth. Through trial and error, over time I managed to achieve excellent results.

Let me remind you a bit about the broth. You can cook the broth using a whole chicken, which is certainly justified when preparing a festive table. However, if you're simply interested in the recipe, a soup set will work just fine. I prepared enough for three servings. Cover the prepared ingredients with cold water and bring quickly to a boil. Skim off the foam and simmer for 10 minutes.

Meanwhile, dry-fry the onion, halved and unpeeled, and the carrot, cut into thick rounds, on a skillet until they are slightly charred.

Place the vegetables in the broth, add salt and a little pepper, and put in the soup greens. Bring to a boil and cook for a couple more minutes. Then remove the pot from the heat and let it steep, preferably overnight. If you are going to boil a whole chicken, do exactly the same—this method will give you a very delicious boiled chicken.

Heat the strained broth and pass it through a damp linen cloth. The result will be a rich, clear broth.

Now, let's get to the dumplings themselves. Take three boiled egg yolks and one raw yolk. This is just enough for three servings. If you're making a larger quantity, keep the proportions. Add a pinch of paprika and season lightly with salt. Of course, using homemade eggs with bright yellow yolks will make the dumplings much more attractive.

Mash the yolks with a fork and mix well.

Roll small balls, slightly larger than peas. And now – my secret! Place the dumplings directly into the serving bowl and put it in the microwave for a minute. This way, the delicate dumplings will firm up slightly and won't fall apart in the broth.

Carefully pour the hot broth over the dumplings, add herbs, and serve immediately.
