
Duck broth
Description
Hearty and aromatic soup. Tender, delicious, and rich duck broth made at home is an ideal option for a "cleansing" day. Moreover, if you experience stomach heaviness, you can also cook duck broth, but in this case remove the skin and boil only the meat (preferably fillet). This broth makes wonderful first courses. The soup is ready to serve.

1. Duck not only yields exquisite broths, but also unique and flavorful soups. This time, I decided to prepare a simple duck broth with vegetables. So, thoroughly wash the bird and place it in cold water.

2. Bring to a boil, skim off the foam, season with salt to taste, and add spices (I usually add bay leaf and a mix of whole peppercorns).

3. Slice the onion and carrot and add them to the broth. Simmer over low heat for about 1.5 hours (the broth should not boil vigorously), skimming off the foam if necessary.

4. When the duck is ready, remove the broth from the heat and add parsley greens—they will perfectly complement and enhance the flavor of the broth.

5. After 10-15 minutes, the broth can be served. If desired, you can prepare croutons to go with it.
