Prepare the necessary ingredients. Wash the vegetables.

Coarsely chop the carrots and onion. Wrap the garlic, cloves, and bay leaf in a small piece of gauze.

Place the bones on a baking sheet, add half of the carrots, onion, and celery. Drizzle with vegetable oil, mix well, and roast in the oven for 40 minutes at 240 degrees.

Transfer the bones and vegetables to a pot. Pour 2 cups of hot water into the roasting pan and transfer the fat from the pan into the pot. Top up with cold water to cover the meat. Add spices tied in cheesecloth, the remaining vegetables, and parsley. Bring the broth to a boil, skim off the foam, and simmer over low heat for 2–3 hours. Season with salt to taste.
