
Beef tongue broth
Description
Hearty and aromatic soup. Beef or veal tongue increases hemoglobin, improves immunity, and is considered low in calories, so it is included in various fitness diets. It is recommended during pregnancy and lactation. Veal tongue takes about one to one and a half hours to cook, while beef tongue requires two hours of boiling. The tongue can be sliced and served separately with herbs, or added directly to the broth.

Prepare the ingredients.

Pour cold water into a saucepan, add the tongue (it can be cut into pieces), and bring to a boil. A small amount of foam will appear just before boiling, which should be removed.

Add the onion, cut in half, to the boiling broth.

Add the coarsely chopped root vegetables.

For flavor, add allspice, cardamom, and bay leaf.

Simmer the broth over low heat, covered, until the tongue is cooked, about 2 hours.

A few minutes before cooking is complete, add hot pepper and garlic. Remove the tongue from the broth, peel off the white film, and slice the tongue into thin pieces.
