I think this simple lamb broth recipe is the perfect option for those, like me, who can't eat much in the mornings or during the day, because on one hand it's a very light and healthy dish, yet on the other hand the broth turns out quite nourishing. So when I make this lamb broth at home, I know I can reheat and eat it at any moment, getting the energy I need throughout the day without any heaviness in the stomach. Oh, and don't forget—the broth is very rich, incredibly tasty, and aromatic. Those who prefer more filling dishes can enjoy it together with the meat. Serve with fresh herbs and sour cream.

For this broth, shoulder or neck cuts are ideal; the meat should be thoroughly washed and cut into fairly large pieces.

Place the meat in a 6-liter pot, pour cold water over it, and set the pot on the lowest heat. After about 30–40 minutes, the water will begin to slowly boil. To obtain a clear broth, carefully skim off the foam formed by the meat during the first 1.5–2 hours, without stirring up the sediment at the bottom. Cook the meat for approximately 3.5–4 hours, depending on how young the lamb is.

After the time has elapsed, prepare all the necessary spices, peel and slice the onions, and also peel the garlic. Add the spices, onion, and garlic to the broth, salt it, and continue cooking for another 60–80 minutes.

After the time has elapsed, our broth will be completely ready. Pour it into bowls, add meat pieces, onion and garlic slices, and hot pickled peppers as desired. Sprinkle the broth with fresh herbs and serve with spicy pepper adjika. Enjoy your meal!
