
Buhler
Description
Hearty and aromatic soup. Traditionally, bukhler is prepared with lamb, but you can use beef or even goat meat instead. No grains are added to bukhler, only potatoes and vegetables of your choice. I add tomatoes (for color) and carrots (for flavor). Don't forget to season with salt, pepper, and other spices or herbs. Serve hot in bowls.

Step 1
Prepare the meat, cutting it into large pieces. Put the meat to boil, remembering to skim off the foam from time to time so that the soup remains clear.

When the meat has been thoroughly cooked and no more foam forms, add the diced potatoes.

While the meat is boiling with the potatoes, roughly chop the tomatoes, onion, and carrots. Add the vegetables to the soup.

Boil everything until cooked. The finished bühler should be thick, rich, and slightly fatty. Serve with black bread, and if desired, sprinkle with herbs.
