
Vegetarian borscht
Description
Perfect for lunch. The vegetarian borscht is ready. You'll end up with a fragrant, delicious soup that can satisfy anyone's hunger. And who said borscht without meat can't be tasty? :) When serving, it's recommended to add chopped garlic, fresh herbs, and sour cream. Serve with herbs and sour cream.

Step 1
To prepare vegetarian borscht, peel the beetroot and cut it into thin strips. Then pour vegetable oil into a heated frying pan and start sautéing the beetroot for 10 minutes. After that, add water to the pan and simmer with the lid closed for 20 minutes.

Peel the onion and slice it into half-rings. Peel the carrot and grate it on a grater or cut into thin strips. Do the same with the parsley root. In a separate skillet, heat the vegetable oil and sauté the vegetables for 10 minutes, stirring thoroughly. Add the bay leaf and whole peppercorns to the skillet.

The tomatoes need to be blanched, then diced and sautéed together with the beet for 5 minutes. Transfer the skillet contents to a large pot, add salt, sugar, and pour in water.

Cut the potatoes into cubes and the cabbage into thin strips, then add to the pot and cook for 5–10 minutes.
