
Borscht with sorrel and egg

Prepare all the ingredients from the list. Rinse the sorrel and dry it. Boil the eggs hard.

Rinse the meat and transfer it to a pot. Add one carrot and one onion, cut into pieces. Tie the parsley with a string so it will be easier to remove later. Also add bay leaf and whole peppercorns. Pour in water to cover.

Place the pot over heat. At the moment of boiling, skim off the foam that forms with a spoon and reduce the heat to a minimum. Continue cooking until the meat is done.
