
Borscht with tongue
Description
The recipe won't take much time. Borscht with tongue is prepared like regular borscht, with the only difference being that you need to boil the tongue beforehand. Whether to use beef or pork tongue is up to you. I've cooked it many times with both types, but didn't notice a significant difference in taste. The only real difference is in price, and it's substantial. You could make the borscht using the broth in which the tongue was boiled. This results in a light, clear soup. However, there's a common belief that it's better not to do this, supposedly because it's unhealthy. I decided not to test this theory and used chicken broth for the borscht instead. The boiled tongue itself is very tasty and undoubtedly elevates the borscht, which already seems like a perfectly satisfying dish on its own. Serve in bowls and enjoy.

Prepare all the ingredients for making borscht.

Pork tongues need to be soaked beforehand. Place them in a pot, pour in water, and let them soak for 40–50 minutes. Then wash them thoroughly and place in a clean pot.

Pour fresh water, bring to a boil, remove the foam.

Cook until tender. If you want to cook borscht using broth from boiled tongues, then strain the broth.

I have borscht on chicken broth. Pour it into a pot and add the sliced potatoes.

Finely chop the onion and place it in a frying pan.

Grate the carrot and add it to the onion.

Grate the beetroot as well and add it to the pan with the onion and carrots.

Pour in the sunflower oil and gently simmer the vegetables over low heat for 10 minutes. Stir occasionally.

Then add the vegetables to the pot with the broth and potatoes.

When all the vegetables are almost ready, add the chopped cabbage to the borscht.

Chop the tomatoes any way you like and add them to the pot as well. Add the bay leaf, then season with salt and pepper.

Cook the borscht until all ingredients are tender. At the end, add chopped garlic and fresh herbs.

Slice the boiled tongue as desired and place it in the pot with the borscht.
