Borscht with boiled beetroot

Description

The recipe won't take much time. If you have leftover boiled beet from breakfast or dinner, you can use it to make a delicious borscht! The beet is added at the very end, which helps preserve the dish's rich color. If desired, prepare the soup using chicken or meat broth. Remember to first boil the meat for a long time, and only then add the vegetables. The soup is ready to serve.

    Prepare the listed ingredients. Boil the beet beforehand in water for 30 minutes, or microwave it in a bag for 5–6 minutes. Rinse the meat under water, peel the potatoes, onion, and carrots, and rinse them as well. Choose beef with a small layer of fat.

    Trim the tendons and membranes from the meat and cut it into pieces. Heat a cauldron or a non-stick pot and pour in vegetable oil. Add the meat pieces and fry for 10 minutes.

    Be sure to sear the meat over high heat until a golden-brown crust forms, sealing in the juices inside the meat pieces so that they turn out tender and juicy after cooking.

    Then pour in hot water and place the container on the stove. Bring the liquid to a boil, reduce the heat, and simmer the meat for 30 minutes.

    Cut the potatoes into medium cubes and the carrots into small pieces or grate them on a coarse grater. Add to the cauldron and cook for another 10 minutes.

    Slice the cabbage into strips and the onion into half-rings. Add to a container and boil for 5 minutes, stirring occasionally.

    Peel the boiled beet, then rinse it under water together with the tomato. Remove the green core from the tomato and dice it into small cubes.

    Grind the peeled garlic cloves and add them to the borscht as well. Gently stir and cook for 5 minutes, then turn off the heat. If desired, add chopped fresh parsley, dill, or other herbs.
