
Borscht with pumpkin
Description
Hearty and aromatic soup. During cooking, the pumpkin absorbs all the dish's flavors and doesn't stand out in taste at all, but adds a special touch to the borscht. If you've never cooked such borscht before, I highly recommend giving it a try. It turns out very delicious! You can use either water or any meat broth for cooking. Today I have a lighter version made with chicken broth. Serve the soup hot.

Prepare all the ingredients.

Pour broth or water into a saucepan, add salt to taste, spices, and bay leaf. Place the saucepan on the stove and bring to a boil.

When the water boils, add the shredded cabbage.

After about 7-10 minutes, add the potatoes cut into cubes and cook everything together until fully done.

Meanwhile, heat oil in a skillet and add the grated carrots and diced onion. Sauté the vegetables until soft, then add the grated beetroot.

Fry everything together until fully cooked, then add the diced pumpkin.

Cook for another 4-5 minutes.

Add the contents of the frying pan to the pot and continue cooking the soup until all ingredients are done.

A few minutes before it's done, add chopped herbs and minced garlic. The pumpkin borscht is ready.
