
Borscht with tomato paste
Description
A hearty first course. This borscht, thanks to an abundance of vibrant and nutritious vegetables, develops a rich flavor and aroma. And even the absence of meat, customary in this dish, doesn't make it any less satisfying or nourishing. I recommend trying this version even to those who can't live without meat. Serve the soup hot.

Step 1

First, we need to prepare all the vegetables. Finely chop the onion and pepper, grate the carrots, celery root, and beet, shred the cabbage, and cut the potatoes into cubes.

Sauté the onion and carrots in vegetable oil until golden brown, then add the beetroot and tomato paste, and fry for another 5 minutes.

Boil 2 liters of water, add potatoes and celery root. After 5 minutes, add cabbage.

After another 10 minutes, add the sauté to the pot, mix well, and add salt and spices to taste. After 5 minutes, turn off the heat, add chopped herbs to taste, and let it steep for about 5–8 minutes.
