
Borscht with pampushky
Description
Perfect for lunch. This borscht recipe with garlic rolls doesn't require frying, meaning minimal extra oil and maximum vegetable benefits. For the broth base, use lean pork, beef, or veal. Beans are an optional ingredient, so if you're not particularly fond of legumes, feel free to omit them. Ladle into bowls and serve.

1. The first preparation step: soak the beans in cold water overnight and cook a meat broth, adding bay leaf, herbs, and vegetables (to taste). Once everything is ready, proceed directly to cooking. Add the beans to the boiling broth. Meanwhile, peel the onion and carrot, and clean the bell pepper. Chop them all and add to the pot after about 15 minutes.

2. Next, peel and lightly crush the garlic. If desired, you can finely chop it or pass it through a press.

3. Be sure to add beetroot to the borscht recipe with garlic pampushky, previously peeled and sliced. Add it to the pot about 15 minutes after the initial addition of vegetables.

4. Peel the potatoes. Let the beet boil for 10 minutes, then add the potatoes cut into medium pieces to the borscht.

6. While the potatoes are boiling, you can prepare the dough. Mix the yeast with warm water, then after 5 minutes add salt, vegetable oil, and flour. Knead the dough and divide it into small balls. Place them into a baking dish, and let rest for 5–7 minutes while you preheat the oven.

7. Shred the cabbage and add it to the pot with the borscht. You can reduce the heat immediately if you prefer slightly undercooked cabbage, and continue cooking for another 5-7 minutes.

8. Put the pampushki in the oven. Prepare the garlic topping. To do this, mince the garlic, mix it with fresh herbs and a small amount of vegetable oil. Add a pinch of salt and mix well.
