
Beetroot and chicken borscht
Description
Hearty and aromatic soup. Traditional borscht is loved by many. Chicken broth is a wonderful choice here, as it is not too fatty. Beets provide not only flavor but also a stunning color. No adults or children will refuse such borscht.

1. Wash the chicken (legs, thighs, etc.) and place in a pot with water. Bring to a boil, reduce the heat, and simmer over medium heat until tender, skimming off the foam.

2. Carefully remove the cooked chicken, let it cool, and separate it from the bones.

3. Strain the broth and return it to the heat.

4. Bring to a boil, add salt, and add the sliced potatoes to the pot.

5. Peel and chop the vegetables. Place them in a frying pan with heated oil and sauté until soft.

6. Add the sliced tomatoes afterward and simmer for another 5 minutes over medium heat.

7. Peel and slice the beet. Place in a frying pan and sauté until tender.

8. Place the vegetables in a saucepan and cook for about 15 minutes. Then add the chicken, garlic, and spices to taste. Cook for another 5–7 minutes, then remove from heat. Before serving, borscht can be garnished with fresh herbs and sour cream.
