
Chicken Borscht

The unique flavor of beetroot, enhanced by a combination of carrots, cabbage, and potatoes, accentuated with the aroma of dill and sour cream, creates a delicious sour-sweet soup that will leave no one indifferent! Step 1
First, prepare all the necessary ingredients. Peel the onion, garlic, carrot, and potato. Rinse the chicken breast.

Slice the onion and celery into half-rings, finely chop the garlic. Shred the cabbage, grate the carrot on a coarse grater.

Cut the potatoes into thin julienne strips. Slice the beetroot in exactly the same way. Optionally, the beetroot can be grated.

Place a pot over heat and pour in a tablespoon of vegetable oil. When the oil is heated, add the onion and sauté for 2–3 minutes over medium heat. Then add garlic and celery, mix well and simmer for about 2 minutes.

Add the cabbage, potatoes, and carrots to the same pot, mix everything thoroughly, and season with salt and pepper. Pour chicken broth over the vegetables, cover with a lid, and simmer over low heat for 35–40 minutes.

Meanwhile, season the chicken breasts with salt and pepper and fry them in vegetable oil. Then add a little water and simmer until cooked. As soon as the chicken is ready, chop it into small pieces and add to the borscht.

When the vegetables are cooked, add lemon juice, a little apple cider vinegar, and chopped dill to the borscht. Mix everything well and add salt if necessary.

Garnish with sour cream and fresh herbs before serving.
