
Borscht with Nettle

1. Wash the meat, place it in a pot, pour in water, and put on the heat. Simmer the broth over low heat after boiling, skimming off the foam, until the meat is tender.

2. Carefully remove the cooked meat from the broth, let it cool, and separate it from the bones.

3. Place the broth back on the heat, bring to a boil. Add a little salt and add the sliced potatoes. Cook for about 12-15 minutes over medium heat.

4. Heat vegetable oil in a skillet, add the chopped vegetables, and sauté until soft.

5. Wash the nettle, dry it.

6. Place in a skillet, add butter, and simmer over low heat for about 5 minutes, stirring.

7. Place the vegetables and meat into a pot. Cook for another 5 minutes. At the end, add pepper (or other spices to taste) and vinegar (preferably wine vinegar). After a minute, remove the borscht from the heat and let it sit, covered, for another 20 minutes before serving.
