Borscht with potatoes

    Prepare all the ingredients from the list. Today I'll be cooking with pork ribs, but you can use any bone-in meat.

    Rinse the meat, pat it dry, and place it in a pot. Pour in 2-2.5 liters of water. Add a bunch of parsley (for convenience, you can tie it with a string), bay leaf, peppercorns, one small onion, and one carrot cut into several pieces. Bring the broth to a boil. Be sure to skim off the foam after boiling. Then reduce the heat to the lowest setting and let the broth simmer gently for 1-1.5 hours.

    While the broth is simmering, I usually prepare the sauté at the same time. Heat vegetable oil in a skillet. Add the diced onion and grated carrot.

    Sauté the vegetables until tender.

    Add grated beetroot on a coarse grater.

    Sauté over high heat for 5–10 minutes until the beets are browned and caramelized. Then add a little broth, cover the skillet with a lid, and simmer over low heat until the beets reach the desired tenderness. At the end, add tomato paste, sugar, vinegar, and spices. I use a ready-made borscht mix.

    Mix and continue cooking for another 3-5 minutes.

    Determine the readiness of the broth by the meat: it should be cooked, edible, and tender. Do not add salt during cooking.

    When everything is cooked, strain the broth. Remove the meat from the bones, cut into pieces, and add to the broth.

    Return the broth to a clean saucepan and bring to a boil.

    Meanwhile, cut the potatoes into cubes.

    Add the potatoes to the hot broth. Cook for 5 minutes.

    Thinly shred the cabbage.

    Mix and cook for about 10-15 minutes (until the potatoes are cooked).

    When the vegetables are ready, add the contents of the skillet. Season to taste with salt. Add the minced garlic at this stage. If necessary, add hot water.

    After adding the beet, do not bring the borscht to a full boil—only until the first 1-2 bubbles appear. The heat should be low. As soon as the borscht begins to simmer, cover the pot with a lid, remove it from the heat, and let it steep for at least 30 minutes; ideally, leave it for 24 hours.
