
Borscht with cabbage and sorrel

1. Place the ribs in water and bring to a boil over heat. Once boiling, reduce the heat and add the potatoes. Wait for foam to appear, then skim it off. Continue cooking over medium heat until the potatoes are done.

2. While the broth is cooking, chop the bacon, carrots, and onion, and put them into a frying pan. The fat will render from the bacon, and the vegetables will fry in it.

3. When the onion becomes translucent, the carrots are nicely browned, and the bacon turns into crispy cracklings, add the sautéed mixture to the broth, along with sorrel, cabbage, and salt. Simmer over low heat for about another 15 minutes.
