Description

Perfect for lunch. For borscht, use the "Paprika" variety of red pepper—it's aromatic and juicy. You can serve the dish with a pickled hot pepper pod if you enjoy a spicy kick. Remember, borscht tastes best on the second day! The dish absorbs the sweetness of the beets and all the flavors. Serve with fresh herbs and sour cream.

    Peel the potatoes, rinse the tubers in water, removing damaged areas, and cut into medium cubes, placing them in a saucepan. Add bay leaves, pour in water, and place the saucepan on the stove. Cook over medium heat for about 15 minutes from the moment it begins to boil.

    Peel the beets and carrots, then rinse the root vegetables in water. Grate them on a fine grater into a bowl.

    Wash the tomatoes and peppers, remove the seeds from the peppers by cutting off the tops. Cut the tomatoes in half and remove the green stems.

    Place the tomato and pepper slices into the grinder, and puree everything until smooth for 1-2 minutes.

    Peel the onion, rinse it, and chop into small cubes. Pour vegetable oil into a frying pan, heat it on the stove, and add the chopped onion. Fry for about 2 minutes until soft.

Be sure to taste the dish and add more salt if needed. Optionally, you can add 1 tablespoon of 6% vinegar if you prefer a slightly sour borscht flavor. Peel the garlic cloves and press them into the pot after rinsing.
