
Borscht (beet-free recipe)
Description
Hearty and aromatic soup. This borscht turns out just as good as the one made with beets. If you're preparing this borscht in winter, you can add tomato paste instead of fresh tomatoes. Also, you don't have to use chicken for the broth—you can use beef or any other meat. If you don't have fresh bell pepper on hand, you can use frozen. The soup is ready to serve.

Boil chicken broth, remove the chicken, and add bay leaf and peppercorns.

Chop the onion and carrot, add to the broth.

Cut the pepper into pieces, removing the seeds, and add to the broth.

Peel the tomatoes and cut them into cubes. Let the broth boil for 2 minutes.

Shred the cabbage and add it to the broth. Add paprika and other spices, then mix.

Peel the potatoes and cut them into cubes. Add to the borscht when it comes to a boil, cook for 5 minutes.
