
Delicious vegetarian borscht
Description
The recipe won't take much time. If you've decided to cook delicious vegetarian borscht at home, you can soak the beans overnight in advance. However, this only makes sense if you prefer soft, well-cooked beans. If you like them firmer, there's no need to soak them. Dried white mushrooms are optional, but highly desirable. They add not only flavor but also an incredible aroma to the borscht.

1. Let's start the process by preparing the beans. Rinse them under running water, place them in a pot. Pour in water and put on the stove.

2. Heat vegetable oil in a frying pan. Peel the beet, cut it into strips or grate it. Place in the frying pan and sauté slightly.

3. In a separate skillet, sauté the peeled and diced onion in a small amount of oil. Add carrot cut into strips or grated. In this recipe for delicious vegetarian borscht, you can also use chopped fresh tomatoes and hot pepper to taste.

4. Add tomato paste, homemade tomato, or sauce to the sautéed vegetables. Mix well and remove from heat after a couple of minutes.

5. Transfer the beet to the pot with the beans. Meanwhile, peel the potatoes, cut them into small cubes, and once the beans are soft, add the potatoes to the pot.

6. In a separate skillet, heat a little more vegetable oil. Add half an onion, diced, and sauté until translucent. Boil the mushrooms slightly, then transfer them to the skillet. Sauté, then add to the pot. The mushroom broth can be strained and poured into the pot as well.

7. Add the sautéed vegetables, season with salt and pepper to taste. You can also add delicious vegetarian dried root vegetables and your favorite spices to the borscht. At the final stage, shred the cabbage and add it to the pot.

8. Simmer until the cabbage reaches your desired tenderness (some prefer soft cabbage, others like it firmer). Remove from heat, then add minced garlic and fresh herbs at the end.
