The soup is easy and quick to prepare. Something tells me that this simple Lviv-style borscht recipe can't really be considered a traditional dish of Lviv cuisine, but that doesn't make it any less delicious—believe me! You definitely want to learn how to make Lviv-style borscht, right? :) 1. Start by cooking meat broth as usual. Don't forget to skim off the foam during cooking. 2. Meanwhile, boil the beetroot. Once it's half-cooked, remove and let it cool. 3. Cut the beetroot into thin strips and place it in a frying pan with vinegar and tomato paste. 4. Dice the salo (cured pork fat) and fry it together with the beetroot. Reduce heat and simmer on low for 15–20 minutes. 5. In the meantime, finely slice the onion and carrots and sauté them together with the other vegetables. 6. Wash, peel, and add the potatoes to the broth. Cook until tender. 7. Now it's very simple—transfer everything from the frying pan into the pot and mix thoroughly. 8. Add a bit of sugar, salt, and pepper to taste. It's also great to add some fresh herbs. :) 9. While the borscht finishes cooking, slice the sausages into rounds and fry them in the same pan until nicely browned. Done! Now serve the borscht into bowls and top with the fried sausages.
