Borscht made with lean beef

Description

The soup is simple and quick to prepare. The first borscht was made as early as the 14th century in the territory of Kievan Rus. Since then, recipes have changed and improved, and cooks have never stopped experimenting with ingredients. Despite its Ukrainian roots, borscht is now prepared all over the world. I suggest the simplest recipe for delicious borscht made with lean beef. Some prefer borscht with pork, others with fatty beef or chicken, and even the vegetarian version is very filling and tasty. Serve in bowls and enjoy.

    1. Place the meat into cold water and bring to a boil. Remember to skim off the foam. Once boiling, add bay leaf, salt, and spices to taste, then let the meat simmer over low heat for one hour.

    2. Finely chop the onion and carrot and sauté in vegetable oil.

    3. While the onion and carrots are frying, chop the beet. You can cut the vegetables with a knife or grate them (as you prefer).

    4. Add the beetroot to the vegetables, fry while stirring constantly, and in the meantime chop the tomatoes. I had ready frozen tomatoes, you can add those as well. If you don't have fresh tomatoes, use tomato paste instead.

    5. When the vegetables are slightly sautéed, add half a cup of water. Simmer the vegetables for 5 minutes over low heat, then set the pan with the sautéed mixture aside and proceed with preparing the broth.

    6. Cook the lean beef for about 1-1.5 hours (check doneness with a knife). When the meat is cooked, remove it and add cubed potatoes to the broth.

    7. Shred the cabbage with a knife or using a shredder. Add it to the soup 5 minutes after the potatoes come to a boil.

    8. Cook the borscht until the cabbage is done, then add garlic and fresh herbs. If you prefer softer cabbage, cook it for about 10 minutes.
