
Lithuanian Borscht
Description
The soup is simple and quick to prepare. In Lithuania, there's a special thick kefir available for cold borscht. You can use regular high-fat kefir instead. You may also add finely chopped green onion tops to the soup. The potatoes can be fried or baked in their skins. Serve the soup hot.

Step 1
I buy ready-cooked beets from the store and grate them on a coarse grater. You can also cook the beets yourself in advance. Peel the potatoes, cut them into wedges, and boil until done.

Place the eggs in a pot and boil them hard. Meanwhile, peel and cut the cucumbers into small pieces, and chop the dill.

Place the beet and cucumbers into a pot, add dill, pour in the kefir, mix well, and add salt to taste.

Pour the soup into bowls, place half a boiled egg in each, and serve the soup with hot potatoes.
