
Red borscht with lamb

I'm offering you, so to speak, a basic recipe for preparing red borscht with lamb, without any special refinements or subtleties. Yet it turns out truly delicious! So if you have a piece of lamb lying around that you don't know what to do with, serve it up in bowls and enjoy.

1. Make broth from lamb as usual. Boil, skim off the foam, and season with salt to taste.

2. Wash the potatoes, peel them, cut into strips, and add to the broth after removing the foam.

3. Chop the onion, carrot, and pepper and sauté in vegetable oil. When the onion becomes translucent and the carrot soft, add the beetroot. Sauté everything together, then add tomato paste, mix well, and remove from heat.

4. While the vegetables are frying, finely chop the cabbage and add it to the potatoes in the broth.

5. When the potatoes are already cooked, add the sauté together with the remaining oil, as well as the bay leaf, minced garlic, and herbs to taste. Add salt, sugar, pepper, and spices to the borscht according to taste. Turn off the heat and let it steep for an hour.
