Borscht made with pork hock

Description

The recipe won't take much time. Cooking time for the pork hock and beet may vary, so check for doneness with a knife. If the broth reduces significantly, gradually add some hot water. Be sure to let the borscht steep; ideally, it's best served the next day, gently reheated over low heat without bringing to a boil. The soup is ready to serve.

    Prepare the necessary ingredients.

    Wash the pork knuckle and thoroughly scrape the skin with a knife. Place it in a large pot. Pour in enough water to cover the knuckle. Put on the heat. Bring to a boil, skim off the foam, then add one beet and one peeled potato. Set to simmer.

    After 20-30 minutes, remove the potatoes. Leave the knuckle and beet to continue cooking until done, approximately 1 hour and 30 minutes. Peel the garlic.

    Mash the potatoes, add 1 tablespoon of melted lard and grated garlic. Mix well. Set aside.

    Slice the cabbage thinly into strips.

    In a skillet, melt the lard. Add the onion cut into cubes. Sauté until the vegetable becomes translucent.

    Peel the second beet. Grate coarsely and add to the pan with the onion. Sauté over medium-low heat, stirring, for 15 minutes.

    Then add 3 ladles of broth, simmer over low heat until tender. Add tomato paste, sugar, and salt. Mix well. Simmer for another 10 minutes, then remove from heat.

    When the beet is cooked, take it out, cool it under cold water, peel it, then grate it on a coarse grater into the pan with the fried mixture and stir.

    Place the julienned potatoes and cabbage into the pot with the knuckle. Simmer everything together for 30 minutes.

    Take out the knuckle. Add the fried beet and onion, mashed potato with garlic, bay leaf, pepper, and salt to taste to the pot. Place over low heat. Heat gently, but do not boil.
