
Pork Borscht
Description
The soup is simple and quick to prepare. Borscht is considered a Ukrainian dish, but people from all European countries love it and enjoy cooking it. Borscht can be made with meat, vegetable broth, or mushroom broth. Serve it in bowls and enjoy.

1. Place the washed meat in a saucepan and cover with water. When the water boils, skim off the foam and reduce the heat. Add a whole peeled onion and carrot to the saucepan. Simmer the broth for 2 hours.

2. Wash and peel the vegetables. Cut the onion into half-rings. Grate the beet and carrot on a coarse grater. Heat oil in a frying pan and add the onion first, then the carrot, and the beet last. To preserve the beet's color, pour one tablespoon of vinegar into the sauté. When the vegetables are fried, add the tomato.

3. Peel the potatoes and cut into small cubes.

4. Shred the cabbage into thin strips.

5. Remove the cooked meat from the broth and cut it into pieces. Discard the onion. Slice the carrots.

6. Add the prepared potatoes to the broth. After the potatoes have simmered for about 10 minutes, add the sautéed vegetables. Add the chopped cabbage, meat pieces, carrots, and parsley. Turn off the heat and let the borscht steep.
