
Nettle borscht

This recipe won't take much time. People in central and northern Russia aren't particularly fond of nettles, but that's a mistake! Residents of southern regions and sunny Ukraine have long discovered the secret of this stinging herb. Most popular, of course, is nettle borscht. This dish is especially common in spring, when nettle greens are still young and not so "aggressive." Try it yourself! This dish is incredibly tasty and healthy—no wonder nettle is called a real treasure trove of vitamins. Help your body recover after the long winter. Now I'll share a simple recipe for nettle borscht: 1. Place chicken breast in cold water and simmer for 35 minutes, skimming off the foam. 2. While the broth is cooking, sauté finely chopped onion and grated carrot in vegetable oil. Cut potatoes into cubes and boil the eggs. 3. Remove the chicken from the broth, slice the meat into serving pieces, and return it to the pot along with the potatoes. Cook for 15 minutes. 4. Add chopped nettle, sliced eggs, sautéed vegetables, chopped fresh herbs, salt, and spices to the broth. 5. Let the soup simmer for 2–4 minutes, then remove from heat. Ladle into bowls and serve hot.
