Turkey Borscht

Description

Borscht is one of the most common dishes on our lunch table. There are countless recipes for preparing it, and anticipating objections that my borscht is not authentic or that it's not borscht but just soup, I'll say right away that this is how I make it, and this is the borscht my family loves. It's not rich and heavy like borscht made with fatty pork or beef. I lightly stew the vegetables in a small amount of oil, rather than frying them for 30 minutes in a pan until fully cooked. I don't mince garlic with lard, as is often done. You could say my borscht is diet-friendly, yet still very tasty. The soup is ready to serve.

    Prepare all the ingredients for making borscht.

    Boil turkey broth. To do this, wash the meat and place it in a pot. Pour in water. Bring to a boil, skim off the foam, and reduce the heat to a minimum.

    Cook the turkey over low heat until done.

    Remove the meat from the pot and strain the broth. Peel, wash, and dice the potatoes, then add them to the pot.

    Peel the onion, wash it, and finely chop. Place in a frying pan.

    Peel the carrots, wash and grate them. Add to the onion.

    Peel the beetroot, wash it, and grate it as well. Place it in a frying pan, pour in refined sunflower oil, and simmer the vegetables for 10 minutes, stirring occasionally.

    Place the onion, carrots, and beets into the pot with the broth and potatoes.

    After 20 minutes, slice the cabbage thinly and add it to the borscht.

    Clean and wash the bell pepper, then slice it. Add to the pot.

    Wash the tomatoes, peel them, and chop by any method. Add to the borscht.

    Season the borscht with salt and pepper to taste and cook until all ingredients are done. At the end, add chopped garlic and fresh herbs.
