Borscht for Diabetics

Description

Borscht for diabetics can be prepared either with water or vegetable broth. For type 2 diabetics, it is permissible to cook borscht using meat broth, but only lean meats should be used: rabbit, turkey, or chicken. Boil the meat for 30 minutes, then rinse it under running water after cooking. The second broth will be less rich but will provide the same benefits.

    Prepare all the ingredients. The beetroot should be boiled or baked in advance.

    Potatoes are the most carbohydrate-rich food. To reduce their starch content, cut the potatoes into cubes and soak them overnight in cold water, placing the container in the refrigerator. In the morning, rinse the potatoes under running water—most of the starch will wash away.

    Grate the carrot on a grater.

    Dice the onion.

    Shred the cabbage into thin strips.

    Transfer the potatoes, carrots, onions, and cabbage to a suitably sized pot. Add water or broth, salt, and spices to taste. Place the pot on the stove and simmer gently, covered with a lid.

    Dice the tomato.

    Grate the beet on a coarse grater.

    Chop the herbs and garlic with a knife.

    When the vegetables are almost ready, add the beet and chopped tomatoes. Cook everything together for another approximately 20 minutes, until all ingredients are fully cooked.

    At the very end, add the herbs and garlic. Cover the pot with a lid, remove from heat, and let it steep for 15–20 minutes. Diabetic borscht is ready.
