
Borscht without water
Description
Hearty and aromatic soup. Of course, you can't do without water entirely, but it's added only at the very end, allowing you to adjust the soup's thickness to your liking. Moreover, you don't need to stand by the stove for long—just put everything in and leave it for a while. At the end, you simply bring everything to the desired taste and consistency, as everything is cooked without salt and water. A pot with a very tight-fitting lid is best, so that steam doesn't escape during cooking but circulates inside; otherwise, the soup may burn.

Prepare all the necessary ingredients for making borscht without water. Wash the vegetables thoroughly, rinse the pork, and dry it.

Grease the bottom of a thick-bottomed pot with vegetable oil. Finely chop the onion and place it on the bottom of the pot. Peel the carrot, grate it on a coarse grater, and add it to the onion.

Cut the pork into cubes and add it to the pot.

Peel the beetroot and grate it on a coarse grater, add it to the pot and pour over with lemon juice. I used raw frozen beetroot, which I prepare and store for winter.

Peel the potatoes, cut them into thick julienne strips, and add to the vegetables and meat.

Remove the stem and seeds from the bell pepper, cut into strips, and add to the pot.

Thinly shred the cabbage and place it in a pot.

Finely chop the tomato, add it to the borscht, and include a bay leaf.

Tightly cover the pot with baking foil and press down with the lid. Place the pot over the lowest heat and simmer the borscht for 30 minutes. Then stir everything, add 2-3 tablespoons of water, cover again, and cook for another 10 minutes. Remove from heat and let stand, without opening, for 20 minutes.

After that, pour in boiling water, add salt, sugar to taste, minced garlic, and herbs. Bring everything to a boil and immediately remove from heat. Taste once more and serve.
