
Hearty Shchi
Description
The soup is easy and quick to prepare. These shchi will surprise anyone you serve them to. Even the pickiest child will surely eat a whole bowl. This soup truly turns out royal and rich. You can adjust the recipe to your taste—for example, use chicken fillet instead of drumsticks, or add rhubarb. Add 1–2 tablespoons of sour cream to each bowl before serving. Serve the soup hot.

Place the meat on a baking sheet lined with parchment paper. Arrange garlic, halved parsley root, 1 carrot, and 1 onion alongside. Sprinkle everything with oil and place under a preheated grill. Cook for 15–20 minutes, turning occasionally.

Then transfer the meat to a pot and pour in water to cover it by four fingers. Bring the contents of the pot to a boil, skim off the foam, and reduce the heat. Season with pepper and add half a bunch of parsley. Simmer for 1.5 hours.

Pour a small amount of beef broth over the mushrooms.

Thinly slice the cabbage, chop the remaining vegetables.

After the beef is cooked, remove the meat from the broth and add the chicken legs, then cook for another 40 minutes. Afterward, separate all the meat from the bones and strain the broth.

In a skillet, heat a small amount of oil, add carrots, onion, and garlic, and sauté until soft for about 5 minutes. Then add the strained mushrooms and cook for another 5-7 minutes.

Then transfer the contents of the skillet into the broth, along with the cabbage. Cook for 15–20 minutes. Add the remaining herbs, meat, and diced ham. Cover with a lid and let stand for 20 minutes.
