
Azerbaijani chicken soup
Description
A hearty first course. This soup is very easy to prepare. You can use any meaty parts of chicken, but it's better not to use chicken breast. Choose spices to your taste, but I find black ground pepper and bay leaf sufficient. The soup is very tasty, aromatic, filling, and rich. The soup is ready to serve.

Prepare the ingredients for making the soup.

Wash the chicken, dry it with a paper towel, and place it in a heavy-bottomed pot or cauldron that has been preheated.

Sear the chicken until a light golden crust forms.

Peel the onion, wash it, and finely chop. Place in a frying pan and add a piece of butter.

Fry the onion over medium heat until translucent. Do not over-brown.

After frying, place the onions into the pot with the chicken.

Pour in water, add salt and pepper to taste. Cook the chicken over low heat for 15 minutes.
