
Azerbaijani soup
Description
This soup is similar to the well-known okroshka, but it doesn't require many ingredients (such as potatoes, cucumbers, and so on). It is refreshing and invigorating, and thanks to the large amount of fresh herbs, it's also very healthy. This dish is simple and quick to prepare, light yet nutritious. Ladle into bowls and serve.

1. Thoroughly rinse all the greens under cold running water. Soak the rice for 10–15 minutes, then rinse it very well (4–5 times).

2. Wipe the herbs with a paper towel to remove excess moisture and finely chop. Transfer the rice to a saucepan, add salt, and cook until done.

3. Pour the sour milk (or kefir) into a saucepan and add 1 egg.

4. Mix thoroughly with a whisk (5 minutes), do not beat. As a result, you should get a homogeneous mixture.

5. Place the pot over heat, bring the liquid to a boil while stirring constantly, add the herbs and cook for 4 minutes, stirring. Then turn off the heat and add the rice, continue stirring for another 3 minutes. Cover the soup with a towel, let it cool down, then serve.
