
Armenian soup
Description
The recipe won't take much time. This tasty soup based on fermented milk comes from Armenian cuisine. It's also known as tanapoor. It can be served both hot and cold. Traditionally it's made with matsun, but matzoni or Greek plain yogurt works just as well, as in my case. Instead of the traditional wheat, you can prepare it with rice or bulgur. Use herbs according to your taste, but I'd definitely keep the mint, especially if you're making and serving this soup cold during summer. Serve with fresh herbs and sour cream.

Prepare all the necessary ingredients.

Boil the wheat until cooked.

Sauté the chopped onion in clarified butter for 5 minutes.

Mix the egg and flour until smooth.

Add matsoni and mix.

Pour in the water and mix until smooth.

Place over heat and bring to a boil. Add the cooked wheat and fried onion. Cook, stirring constantly, for 10 minutes.

Add the chopped greens, mix and cook for another 5 minutes.
