
Armenian lamb soup
Description
The soup is simple and quick to prepare. For those who enjoy spicy flavors, it is recommended to add a chili pepper pod directly to the bowl, not to the pot or cauldron. Alternatively, you can increase the amount of garlic added to the soup. Serve the soup hot.

Prepare the listed ingredients. Peel and rinse the vegetables in water. If using frozen peppers, thaw them. Tomatoes can be replaced with tomato paste or tomato juice.

Rinse the meat and remove the membranes, which lamb is rich in. Cut into portion pieces and place in a pot or cauldron. Add bay leaves.

Pour in the water and simmer the meat for about 40 minutes over medium heat, skimming off the foam that forms.

After the specified time, add whole peeled potatoes to the container and cook for another 20 minutes.

Cut the onion and carrot into large pieces, add to the container and boil for another 5 minutes. Add salt and ground black pepper.

Pour in the tomato juice and add the bell pepper slices. Boil for about 5 minutes.

Peel and press the garlic clove into the container. Rinse and chop the parsley, then add it to the soup. You can substitute parsley with fresh cilantro.
