
Armenian soup
Description
The recipe won't take much time. Armenian yogurt soup with wheat berries is prepared and seasoned with mint or cilantro. I've seen several variations of the recipe. Some use parsley, others add cilantro. Most also use mint. Add eggs or wheat if serving the soup hot. Serve with fresh herbs and sour cream.

Rinse the wheat, let it soak in hot water for 20–30 minutes until the grains become soft. Then drain and set aside.

In a large saucepan, mix yogurt, sour cream, flour, and egg, and whisk until smooth and free of lumps.

Add the wheat, mix well, and slowly start pouring in the hot water, stirring thoroughly. Cook over high heat until boiling, stirring constantly.

Once the soup comes to a boil, reduce the heat and let it simmer for 5-7 minutes.

Meanwhile, prepare the butter with onions and sautéed onions. Add them to the soup. Season with salt to taste.
