Armenian salad with coriander

Description

Perfect for an everyday table. Ideally, this recipe should use summer "Micado" tomatoes, but sweet cherry tomatoes will work well during the winter months. You can use sweet Crimean onions or white Sterling onions; these varieties don't need marinating, but in this case, it's recommended to drizzle the salad with lemon juice. Garnish as desired and serve.

    Prepare all the necessary ingredients. Peel the onion, thoroughly rinse the vegetables and cilantro under running water, and dry them with paper towels.

    Slice the onion into thin rings, place in a small container, pour over one tablespoon of vinegar, add a little water, and set aside for a while to marinate, so the onion won't be bitter in the salad.

    Slice the cucumber into evenly thick rounds and arrange them in a single layer on a flat plate.

    Clean the bell pepper from seeds and stem, cut the flesh into strips, and place as the next layer.

    Ideally, the tomatoes should be summer ones of the "Micado" variety, but sweet cherry tomatoes will also work. Slice them into rounds and place them as the next layer.

    Drain the marinade from the onion, separate it into rings, and place it on top of the salad as the next layer. Now season the salad with fresh ground pepper and sprinkle with sea salt.

    Generously sprinkle the salad with cilantro, drizzle with olive oil, and serve. Lemon juice is often added to the dressing as well.
