Description
This soup is widespread throughout the Caucasus. It was considered a ritual dish and was called "the poor man's dish" because after sacrifices, the poor were given offal and bones, from which this tasty and nourishing soup was made. This soup was served in the morning for breakfast to keep a person full throughout the day. Besides, it is also very beneficial for our bones. You can use any greens you like. The soup is ready to serve.

Prepare all the necessary ingredients.

Process the beef feet and soak them in cold water for 24 hours. Then cut into pieces.

Place the feet in a pot and cover with water. Bring to a boil and simmer over low heat for 7.5 hours. Add salt, bay leaf, and pepper. Cook for another 30 minutes.

In another pot, cook the prepared tripe until tender. At the end, season with salt to taste. Remove, let cool, and slice into strips.

Remove the legs and separate the meat. Strain the broth, return the meat to it, add the tripe, and bring to a boil.

Grind the garlic and rub it with salt.

Peel the radish, grate on a coarse grater, and salt.

Place garlic on a plate, pour hot khash over it, sprinkle with chopped herbs, and serve with radish salad and thin lavash.
