
Armenian Bean Soup

First, you need to cover the beans with 2 liters of water and boil them until cooked.

Drain half of the beans in a colander, then mash or blend them. Leave the other half in the pot.

Chop the walnuts finely—the smaller the pieces, the more homogeneous the soup will be.

In one skillet, sauté finely chopped onion in butter.

In another pan, lightly toast the flour (without oil!) until slightly golden, then dilute it with a small amount of bean broth.

Wash, dry, and finely chop the herbs.

Now combine the puréed beans, chopped walnuts, sautéed onions, and flour-based sauce. Transfer everything to the pot with the whole beans, season with salt and pepper, mix well, and slowly bring to a boil over low heat. Add fresh herbs to the soup pot, then turn off the heat. Let the soup steep, covered, for 10–15 minutes before serving. Delicious served with thin Armenian lavash, butter, and garlic. :)
