
Andalusian soup
Description
Perfect for lunch. The Andalusian soup has a pronounced garlic flavor and aroma. The dish becomes more filling with unsweetened baked goods, which are best dried in advance or replaced with croutons. Don't hesitate to add spices and herbs to taste, creating a new version of the dish each time.

Prepare the listed ingredients.

Rinse the tomatoes in water, place them in a deep container, and pour boiling water over them. Let sit for 10 minutes to steam, then transfer to cold water. Peel off the skin and remove it, cut out the green cores.

Cut the tomato flesh into the container of a blender or food processor.

Peel and rinse the onion, chop half of it into cubes and add to the container with tomatoes. Peel the garlic cloves, slice them and add to the container.

Add salt and ground black pepper. Pulse for 3 minutes until finely chopped. Then add croutons or pieces of baguette to the container. Let them soak for 5 minutes. Then pulse again for 2–3 minutes until smooth.

Pour the prepared cold soup into bowls and drizzle with vegetable oil, preferably cold-pressed olive oil. Place in the refrigerator for at least 30 minutes. Garnish to taste with croutons, chopped boiled egg, smoked meats or sausage slices, and serve.
