
Acquacotta

Acquacotta is a dish created by Italian shepherds, who would cook a soup in the evening using vegetables and herbs gathered throughout the day, then pour it over stale bread to satisfy their hunger. Since the soup's ingredients varied each time, there is no exact recipe for this Italian soup. Its main ingredients are onion, tomato, olive oil, and stale bread.

Prepare the listed ingredients. You can use any vegetables according to your taste. You can also use any type of bread.

Peel the carrots, onion, and potatoes, and rinse them in water. You can omit the potatoes and replace them with tomatoes. Cut the carrots and potatoes into medium cubes or slices, add to a pot. Pour in hot water and boil for 15 minutes.

Slice the onion into half-rings and cut the washed tomato into slices. Add to the container. Boil for about 2-3 minutes.

Wash and chop the celery greens, then add them to the container along with salt and ground black pepper. Press the peeled and washed garlic cloves into the container. Simmer for another 2–3 minutes and taste the soup.

Place slices of stale bread on the bottom of a deep plate or bowl and drizzle with vegetable oil, preferably olive oil.

Pour the prepared soup into bowls and serve hot. The dish can be accompanied by sour cream, mayonnaise, or garlic sauce.
