
Potato puree soup
Description
A hearty first course. This is quite an unusual recipe, and I must admit right away that it will require some effort. But I'm sure you'll be delighted with the result. This soup can be topped with bacon, herbs, or cheese before serving, for example. Serve with fresh herbs and sour cream.

1. Wash the potatoes, dry them, place on a baking sheet and put in a preheated oven at 180°C. Bake for about 50 minutes until tender (time may vary depending on the potato size).

2. Place the chopped bacon in a saucepan and fry until golden brown. Then transfer to a plate.

3. Add the chopped onion and celery to the pot and sauté until soft.

4. Let the cooked potatoes cool slightly, peel them, and place the flesh into a pot.

5. Using a masher or blender, puree the vegetables with broth. Bring to a boil, add salt and pepper. Cook for a couple of minutes, then pour in the cream and remove from heat after one minute. Serve with bacon.
