
Homemade-style solyanka with sausage
Description
A hearty first course. Making solyanka is pure pleasure! For this soup, we'll need several types of sausage, potatoes, onion, carrot, pork fat, and pickled cucumbers. Add garlic and spices to taste, and before serving, add lemon and olives to the solyanka—this will make its flavor unforgettable! Sour cream can also be added to taste. Ladle into bowls and serve.

1. There's no point in making solyanka with broth, as it turns out quite rich and hearty anyway. I usually take several types of sausages (boiled and smoked). Ready-made solyanka sets are available in stores, but it's better to choose ingredients yourself. Take a few types of smoked sausage, maybe 2-3 kinds of sausages (1-3 pieces each), and so on. This time I only have smoked sausage.

2. The sausage should be cut into cubes.

3. Also chop the potatoes. Put the potatoes to boil, and after the water comes to a boil, add the spices (bay leaf, peppercorns) to the broth. Then add the sliced sausage. Simmer the soup over low heat.

4. While the soup is boiling, fry the bacon. Chop it into small cubes and render it over low heat.

5. Add the chopped onion, carrots, and tomato paste. Then add the garlic and pour in several tablespoons of broth.

6. At the end, add the salted cucumbers cut into matchsticks to the sautéed mixture and simmer for a few more minutes. Then transfer everything to the broth.

7. Simmer the solyanka over low heat until the potatoes are cooked. At the end, you can add fresh herbs.

8. Before serving, you can add half a lemon and olives to taste—these two ingredients will enhance the flavor of the dish and make the soup extraordinary.
