
Salad with liver and oranges
Description
A simple dish to prepare. Once I tried a similar salad in a restaurant and wanted to make it myself. For the liver and orange salad, I recommend using chicken liver—it's the most tender, has little bitterness, and cooks quickly. See the detailed recipe. Serve chilled.

Wash the liver and dry it.

Finely chop the garlic.

Cut the oranges into slices 0.5 cm thick.

Heat olive and butter oil in a frying pan, fry the slices on both sides, then set aside.

Dredge the liver in flour.

Sear in the same pan used for the oranges (the liver will absorb their juice). When the liver is browned on both sides, add herbs, salt, pepper, and garlic.

We also add wine, simmer until it evaporates. Then add jam and balsamic vinegar.

Final step: add the oranges to the liver and cook for another 2 minutes. Let it cool slightly and serve. The liver and orange salad is ready! You can serve it on its own, garnished with herbs, or with rice.
